Spaghetti Squash

This is my children’s favorite squash. It’s a great as a side dish and is a great replacement for pasta in many dishes. I used it in place of noodles in a lasagna-type casserole with delicious results.


1 whole Spaghetti Squash
Butter to taste
Sea Salt to taste
Black Pepper (Ground) to taste


Preheat oven to 350°F. Cut squash lengthwise and scoop out the seeds. Place cut side down in a greased pan (or in a cake pan filled 1 inch high with water).

Bake for approximately 30 minutes depending on the size of the squash. When the squash gives a little when pressed with the back of a spoon it’s done. I like to then hold it with a hot pad while I scrape out the squash “noodles” with a fork. Then I add the butter while it’s still hot enough to melt. Season with sea-salt and freshly ground pepper and serve immediately.

Done this way it is a good side dish. It can also be used as noodles and served more like spaghetti as in this recipe.
