This is a great salad to make in the summer when super sweet corn can be found at markets and road-side stands.
The first time I tried freshly picked sweet corn raw was in Cy’s Market when Vito gave me some of his fresh corn to sample there in his wonderful little market. I wondered why we ever cook corn when it’s this good raw.
I made this salad to incorporate some of the abundant summer vegetables we seem to accumulate.
6 whole Corn on the Cob fresh, sweet
1/2 Red Onion
2 whole Avocados
1/2 bunch Basil (or Cilantro), chopped)
1 Celery (1 stalk)
1 whole Zucchini small, chopped
1 whole Red Bell Pepper
1 whole Juice of Lemon (if using Limes, use 2)
1 whole Tomatillos (or 2 if small)
1 cup Extra Virgin Olive Oil
2-3 whole Garlic cloves
1 Ginger Root (approx. 1-inch section of root)
1/4 teaspoon Sea Salt
Put all salad ingredients in large mixing bowl. Blend all dressing ingredients in vita mix until liquefied. Pour over salad and top with chia seeds and freshly ground pepper. Some other ideas are: cucumbers, jicima, apples, broccoli, or many other fruits or vegetables, chopped. Have fun with it!Go to Recipe →
