Fresh Corn Salad
This is a great salad to make in the summer when super sweet corn can be found at markets and road-side stands.

Ingredients
Salad
- 6 whole Corn on the Cob fresh, sweet
- 1/2 Red Onion
- 2 whole Avocados
- 1/2 bunch Basil (or Cilantro), chopped)
- 1 Celery (1 stalk)
- 1 whole Zucchini small, chopped
- 1 whole Red Bell Pepper
Dressing
- 1 whole Juice of Lemon (if using Limes, use 2)
- 1 whole Tomatillos (or 2 if small)
- 1 cup Extra Virgin Olive Oil
- 2-3 whole Garlic cloves
- 1 Ginger Root (approx. 1-inch section of root)
- 1/4 teaspoon Sea Salt
Directions
Put all salad ingredients in large mixing bowl. Blend all dressing ingredients in vita mix until liquefied. Pour over salad and top with chia seeds and freshly ground pepper. You can also add cucumbers, jicama, apples, broccoli, or many other fruits or vegetables, chopped, to the salad.
